Recipe for Skodsborg’s Paleo Bread

paleo smørrebrød bread the lobby recipe pastry chef healthyQuite a few of our guests have asked for the recipe for our tasty – and healthy – paleo bread, and our Head Pastry Chef, Susie Høj, is more than happy to share it.

Recipe for Skodsborg’s Paleo Bread

100 g pumpkin seeds
150 g sesame seeds
150 g flax seeds
5 eggs
100 g sunflower oil
10 g salt
100 g peanuts (deskinned)
75 g almonds (deskinned)
75 g almonds with skin
50 g hazel nuts

Mix everything in a food mixer till the eggs thicken in order for the nuts not to settle at the bottom (approx. 5 minutes). Pour the mix into a bread baking tin, greased with oil.

Bake the bread at 170 degrees Celsius for approx. 35 minutes.

Enjoy!

We invite you to read Nutritionist Gitte Høj’s explanation on why paleo bread is so healthy for you.

Mathias Nielsen: ”CrossFit is an Investment in Yourself”

Kurhotel Skodsborg spa fitness crossfit workout mathias nielsen”You do press-ups like a girl,” an elderly woman told our CrossFit Instructor, Mathias Nielsen, the first time he tried his hand at this popular type of workout.
“I was over-weight as a teenager and lost 25 kg from lifting weights – so I was muscular but not very flexible. CrossFit just makes so much more sense than lifting weights. You make movements which the body is built to make – and you grow stronger on the stuff that you do in your everyday life.”

“We Have Fun – and Improve”

“The participants in my classes have their say on the workouts,” says Mathias Nielsen.
Mathias listens to the participants’ requests and makes an effort to compose programmes where everybody gets the result from the workout that they want.”
Mathias adds: “The participants tell me that they like my classes because we work hard but they have fun – and they improve their level of fitness.”

A Typical CrossFit Class with Mathias Nielsen

“I like to play loud music and I focus a lot on creating a good atmosphere and good energy in my CrossFit classes,” says Mathias Nielsen when he is to give an example of one of his typical CrossFit classes.
He works from a fairly fixed template.
First, all first-timers are introduced to the team.
“We perform as a team,” says Mathias.
“I often work with partner-workouts, meaning that the newbies have a friend from the beginning. Someone who will help and motivate them.”
Then comes the warm-up – preferably something fun which will bring a smile to the participants’ faces.
And finally the workout of the day (WOD) – most often 30 minutes, sometimes with 15 minutes of lifting weights, and sometimes with a so-called “finisher”, meaning that all the participants are “used” to the max.

Mathias Nielsen’s Background

Mathias has been lifting weights for about ten years and doing CrossFit for about five years.
He has had the below training

  • CrossFit course from CrossFit Copenhagen
  • CrossFit Level 1

Mathias has just begun competing in CrossFit competitions and will, among other competitions, participate in First Timers Vol. 11 on 28-29 September 2018 in Køge and in Gladsaxe CrossFit on 1 November 2018.

Celebrating 120 Years with ”The Healthy Life”

Local lore has it that our founder, Carl Ottosen, rode his bike along the scenic “Strandvejen” more than 120 years. He was intrigued by the derelict buildings across from the beach in Skodsborg, enquired whether they were for sale, and the rest is history. Our history…
Dr Carl Ottosen had studied health and physiotherapy in the USA and opened Skodsborg Sanatorium on these premises on 4 May 1898.

The Eternal Principles for “The Healthy Life”

The sanatorium was recognized for its expertise within the area of physiotherapy and for its preventive approach to spa stays and healthy living.
Carl Ottosen’s principles for “The Healthy Life” were quite simple: you need light, air, water, nutrition, rest, and exercise – and plenty of it.
His expertise lives on at Kurhotel Skodsborg, where we have further developed his philosophies into new, efficient treatments, fulfilling the desires of modern man to take care of oneself, stay in great physical shape and get the most out of life.

“The Healthy Life” Wins International Accolades

We delighted that, as we celebrate our 120 years jubilee, these principles are not only still relevant in our modern, high-paced society but they also win international accolades from the most experienced spa and wellness experts in the world.
The prestigious Spa Guide 2018 published by TATLER MAGAZINE, known as “the world’s oldest and best magazine”, has just awarded us the title BEST FOR A ‘NATURAL HIGH’ and named us “One of the 7 best spas in the world in 2018.” And in March this year the equally prestigious Conde Nast Traveller Spa Guide 2018 named us BEST FOR A REBOOT.

The next 120 years indeed look full of promise…

Casper Gammelmark: ”You Will Become Stronger and Improve your Technique”

“I followed Rich Froning, a.k.a. “The Fittest Man in History”, on YouTube. He was awesome and his exercises inspired me,” says our CrossFit Instructor Casper Gammelmark about his first experiences with CrossFit.
Casper was a high-level competitive table tennis player and felt that the weight training, which had been organized by the team’s physiotherapist, was too boring. He was captured by the competitive element in CrossFit and these days he participates in CrossFit competitions and training camps all over the world.

A typical CrossFit Session with Casper Gammelmark

“I always begin my sessions with a light warm-up followed by going through the technique in the exercises,” says Caper Gammelmark, when asked to tell about one of his typical CrossFit sessions.
The actual work-out varies in duration, pattern and movement, typically mixing body exercises, machines and weight lifting.
Casper will often round off the session with a cool-down, ensuring that the participants get rid of the lactic acid in their muscles.
The participants in Caper’s classes are especially enthusiastic about his efficient programmes as well as the great advice he offers on techniques and the correct movement patterns. Further to this they emphasise that they become stronger and improve their techniques.

Casper Gammelmark’s Background

Casper has the below training

  • CrossFit instructor (Level 1)
  • Eleiko’s weight lifting instructor course
  • Team Danmark’s instructor training

Further to this he holds a bachelor’s degree in IT and communication

TV HOST FELIX SMITH: ”I GET MORE ENERGY IN MY EVERYDAY LIFE”

Felix Smith health programme work out saunagus jens thygesen

“My work life is quite stressful and I need to take in a lot of new information every day. The health programme at Kurhotel Skodsborg where I work out with, among others, Thomas Rode, and participate in “SaunaGus” means that I get more energy in my everyday life,” says TV Host, Felix Smith.
Felix is known from the TV programmes “Voice” and “Denmark has Talent” and has recently landed his dream job hosting “Go’ Aften Danmark” (Good Evening Denmark) on Denmark’s largest TV channel, TV 2.
At home Felix is also quite the busy bee with two sons aged 3 and 9, and his wife, Marie Schmidt, who writes cookbooks for children and feeds 100 children every lunch time in a day care institution.
Felix’s boyish charm is one of the reasons the Danes love him but he recently turned forty which means that “you stop and take the time to analyse your life situation”.

A Unique Tailor-made Health Programme

As Felix Smith was making his mid-life status he chose to have one of the unique, tailor-made health programmes, which Kurhotel Skodsborg offers in collaboration with MD Jens Thygesen from Thygesen Health.
The programme takes its starting point in Felix, his life situation and his everyday life. It includes a health examination and in-depth conversations with MD Jens Thygesen as well as our unique fitness test followed up by advice from a personal trainer.
Normally our Nutritionist, Gitte Høj, would also contribute to the programme but Felix’s wife Marie employs her professional chef’s knowledge about healthy food. “We have kale every day,” says Felix with a glint in his eye, so this was not judged to be necessary in Felix’s case.

“The Programme Motivates me to Work Out and Eat Healthy Food”

”We Danes do not look up our GP unless we are ill, and it is not even possible to have preventive health examinations at this level at a private GP’s,” says Felix Smith.
Felix’s initial examination with, among other tests, a full blood count as well as ultrasound scans of his liver and his neck artery showed that everything was “all round good”.
And now, six months later, it is all round even better!
Felix has, however, chosen to continue the programme, saying: “The money for the programme is well spent. The measurable results motivate me to work out and eat healthy food.”

”I Have Not Been Ill One Single Time”

“I work out two to three times a week with Thomas Rode or one of the other instructors. I have worked out with all the instructors and they are all great,” says Felix Smith.
Membership at Skodsborg Spa Fitness is part of the programme and Felix has become especially fond of SaunaGus – and preferably with our reigning Danish champion, Henrik Baunkjær Sørensen.
“I have not been ill one single time, since I began working out here, despite the fact that I am exposed to kindergarten bacteria and what have you every day,” says Felix. In his opinion SaunaGus should be a major part of the credit for his strong health.
“I have googled it and if you enter a 100 degrees warm sauna and jump into ice cold water afterwards your body thinks you are about to die and boosts your immune system.”
He especially recommends SaunaGus in the evening.
“If I do it in the morning I simply get too tired but an evening “gus” ensures me a great night’s sleep,” he smiles.

Bonus Info

Felix Smith is the mastermind behind our most popular paleo ”smørrebrød” in The Lobby: ”Felix Smith Special” with avocado, falafel and humus.
“That’s the advantage of being married to a chef,” he smiles and says about the healthy best seller: “This is as sinful as it gets at our place.”

Kurhotel Skodsborg Takes it All at ”Cake of year 2018”

årets kage 2018 konditor konditorlaug erik kroun susie høj frederik holst benthin the lobby

If you have a sweet tooth a visit to our The Lobby could be a great idea.
At the annual Confectioner’s Championship, “Cake of the Year”, on Saturday 10 March 2018 at Hotel Crowne Plaza in Copenhagen, our young pastry chefs took 1st to 4th place. And you can taste all the cakes in our The Lobby…

Young, Ambitious Pastry Chef won 1st place

23-year old pastry chef and chef’s apprentice, Fredrik Holst Benthin, took 1st place in ”Cake of the Year 2018”. He won with “Sunshine”, a dream-like creation with passionfruit curd on ginger biscuit decorated with lemon sour cream. Frederik is a trained confectioner; he won The Nordic Championship in 2015 and has been a member of the Danish National Pastry Chefs-team for three years.
His high professional ambitions made him not only become a chef’s apprentice at Kurhotel Skodsborg’s reviewer-praised gourmet restaurant, The Restaurant by Kroun, but still compete in this unofficial national championship.

“A Joy to Watch Young People Develop”

”I am immensely proud of the first place at “Cake of the Year”-competition. The last couple of years I have made it to fifth place twice, so it feels great to finally win the competition. The fact that my colleagues from Kurhotel Skodsborg win second, third and fourth place only makes me more proud to be part of such an amazing team,” says Frederik Holst Benthin.
”It is a young and very competent confectioner’s team we have at Kurhotel Skodsborg and I am almost bursting from pride over the results they have achieved at “Cake of the Year”. It is a true joy to watch when young people develop and have the ambitions and ability to think outside the box,” says Mai Kappenberger, CEO at Kurhotel Skodsborg.
Erik Kroun, Head Chef at Kurhotel Skodsborg, has prioritised a strong cake and dessert profile as part of the spa hotel’s gastronomic profile, and the above results definitely prove that he is successful…

The Runners-up at “Cake of the Year 2018”

The other winners from Kurhotel Skodsborg were:
SILVER – 2nd place: Mette Sophie Olsen, 25 years, trained pastry chef from the famous Danish pastry shop, La Glace. Mette participated with “Miss Verbena” – white crunchy base with lemon verbena, raspberry jelly with lemon mousse and a coconut sponge.
BRONZE – 3rd place: Caroline Flyvenring Andersen, 19 years, pastry chef apprentice.  Caroline participated with ”Camomille” – short crust with elderflower and lemon mousse, white chocolate and fresh thyme.
4th place: Line Kürstein Wolter, 25 years, pastry chef. Line participated with ”Pflaume” – plum, blood orange, honey and sour cream mousse on crisp biscuit with a hint of liquorice and pecan.
Susie Høj, 27 years, heads the confectioner’s team and participated with ”The Root,” – blackberry, eucalyptus and liquorice – but didn’t finish among the ten first places.
All the four winner cakes can be enjoyed in The Lobby at Kurhotel Skodsborg, either as part of a true ”hygge” experience in front of the fire place or as ”cake-away”.

About the Cake of the Year-Competition

Cake of the Year is an annual competition arranged by Copenhagen Confectioner’s Guild.
2018 was the 34rd year that a selected group of highly trained Danish confectioners was gathered to compete in what must be the sweetest competition in Denmark. In 2018 more than 100 confectioners participated in the competition.
The winner is awarded DKK 10,000 as well as the right to exhibit the Copenhagen Confectioner’s Guild’s challenge cup at his or her work place till next year’s winner is found.
